It's pumpkin season!! That means I had to come up with a fall related recipe and I couldn't wait to share it. It's so good and so healthy, I hope you guys love it as much as I do!
PUMPKIN LOAFS
1/4 cup pumpkin
1/2 tbsp almond milk
2 eggs / egg replacer if vegan
3 1/2 tbsp maple syrup
1 cup almond flour
1 tsp baking powder
1 tsp cinnamon
1/2 pumpkin pie spice
1 tsp vanilla extract
Start by whisking 2 eggs in a mixing bowl, then add pumpkin and almond milk followed by the rest of the ingredients.
Preheat oven to 350 degrees
Bake for 20 minutes
Add icing on top, I used simple mills vanilla icing and melted it in the microwave for a couple seconds
Add sprinkles and try it!
