"Beef" Succatash

Ingredients: Orange Squash, leeks, onion, beyond burger, mushrooms, yellow rice

Preheat oven or air fryer to 400 degrees




I like to use a rice cooker since it easy and all you have to do is put the rice in the cooker, add water (as directions suggest) and press the cook button.

If you do not have a rice cooker, read the instructions on the package. You always want to cook rice first since it will take the longest to cook.

I vary my rice for each meal, but in this particular meal, I used yellow rice. On cutting board, cut up squash into small squares and season with borsani seasoning (favorite.)

Add the squash to the air fryer for about 15 mins or until golden.

In frying pan, put a teaspoon of olive or avocado oil and warm on medium or 5. While pan is warming up, dice leeks, onions and mushrooms and set aside.

Once the pan warms up, put in beyond burger or any meat alternative. Cook each side for 5 minutes and then add diced vegetables.

Cook until vegetables are soft and meat is cooked, around 15 minutes.

Add one teaspoon of Tia Lupita Chipotle hot sauce (delicious) and the cooked squash into the pan and mix.

To serve, add your desired amount of rice to the bowl and place mixture on top.
