Cilantro Lemon Rice Bowl



This is dish is very filling and includes many different flavors!

Meal serves 2

Ingredients:

- 1 cup rice

- 2 cups coconut milk

- cilantro

- Half of small lemon

- Shiitake mushrooms

- Broccolini

- Cauliflower

- Asparagus

- Garlic ( desired amount to season )

- 1/4 cup Chickpeas ( can omit if you would like )

- Cashews

- Onion powder, Salt, and Pepper to taste





Begin heating up a pan with oil and garlic. Cook rice with coconut milk instead of water in a rice cooker or on the stove. Add cilantro and the half of small lemon to rice once fully cooked. Sauté all veggies in the pan with the oil and stir together. Add your seasoning to the mixture of vegetables. Plate with the cilantro lemon rice on the bottom of a bowl and top with the sautéd vegetables. Mix in the chickpeas to the bowl. Put small handful of cashews in a food processor or high power blender until crumbly. The cashews should act as your garnish and a crunch to your meal. Serve to eat and enjoy!
