Lentil soup is a great way to get protein and it is super delicious! So why not pour it over quinoa for dinner??
Start with oil in a pan and sauté shallots and cloves of garlic in olive oil
Add 1 cup shredded carrots, 1 stock of celery, and 1 cup tomato sauce to the pan
Wash the 1 3/4 cups of red and brown lentils and drain them
Add the lentils to the mixture
Bring 1 quart veggie broth or miso broth( We used Oceans Halo ) to a boil
After it starts to boil, add in the mixture from the pan into the pot
Let simmer for half an hour
Mix in a dash of salt, pepper, crushed red pepper, cayenne pepper, curry powder, bosari seasoning, and nutritional yeast
When the soup is being made add 1 cup quinoa to 2 cups water or almond milk into a rice cooker
Once the lentil soup is done simmering for 1/2 an hour pour your desired amount over quinoa
