If you are ever in the mood to try something new, especially a veggie burger, this one is for you!
This recipe makes four jumbo patties
Ingredients:
1/2 cup quinoa
1 cup water
1 and 1/2 teaspoon garlic powder
3 teaspoons thyme or oregano
1 teaspoon smoked paprika
1/2 teaspoon ground chipotle pepper
1 can chickpeas
1/2 cup diced spinach
1/2 cup diced bell pepper
1/2 cup diced shallot
Half of lemon squeezed
1/3 cup gluten free flour
dash of salt and pepper
Start by preheating your oven to 375 degrees
Add quinoa to a rice cooker or follow method to cook on the stove
Begin cutting and dicing you pepper, shallot, and spinach and leave off to the side
Mash the chickpeas until it is a crumbly consistency or somewhat whole
In a bowl mix quinoa, pre copped vegetables, the chickpea mix, and the rest of the spices
Mix well with the gluten free flour and the mixture should start to form
Divide the mix into 4 balls and press down into patty like shapes
Make sure you flatten the balls with your palms and put them into the oven on parchment paper for 15- 30 min depending on how strong your oven is
Sprinkle sea salt on top of the quinoa burgers and check on them while baking
Should be likely crispy when done cooking
Enjoy on a gluten free bun with tomato, lettuce, dairy free cheese or have it plain as above
