Veggie Pad Thai

Favorite dish when craving asian food!

Base:

- 1/2 cup peppers

- 1/4 cup mushrooms

- 2/4 cup zucchini

- 1/2 cup broccoli

- handful of spinach

- Lotus foods Rice Pad Thai noodles

- 1/4 tsp salt

- 1/4 tsp garlic and onion powder

- 1/4 cup of peanuts ( optional )

Thai Sauce:

- 3 tbs liquid aminos

- 1 tsp sriracha

- 1 tsp maple syrup

- 1 tsp rice vinegar




- Add oil to a pot and let heat up

- Add the peppers, mushrooms, zucchini, and broccoli to the pot and begin to sauté them

- Season the vegetables with salt, garlic, and onion powder

- Follow directions of the Pad Thai noodles and bring them to a boil

- Once the vegetables are sautéd, add the handful of spinach

- Drain the liquid from the noodles and add them to the fully cooked veggie mix

- Pour in the Thai sauce and let simmer for 1-2 min

- Put 1/4 cup of the peanuts in a ziplock bag and hammer until crushed

- Serve the Veggie Pad Thai with a sprinkle of crushed peanuts on top

- Enjoy!
